Lazy Sunday Coleslaw

Sunday is always a lazy day in our household. It's a day when we wake up late, struggle to get out of bed only for tea and coffee only to crawl back up in the room, then, a few moments later, congregate back to the kitchen to prepare lunch. That is why Sunday lunch is almost always those meals that are easy to whip up with absolutely no frills. Today was no exception. We fried some store-bought fish sticks and steamed some vegetables. And that should have been it.


As I squirted prepared tartar sauce into a bowl, however, I felt like a coleslaw. I imagined that the tanginess of the tartar sauce would make a really interesting coleslaw and it would go great with the fried fish sticks. I debated with myself for a while wondering whether making coleslaw would go against the lazy Sunday lunch theme. Until I realized that there is still left-over shredded cabbage and cucmber side salad from the Ebi Fry lunch yesterday, so all it took to make coleslaw is to throw in a few other vegetables. Perfect.

Lazy Sunday
Coleslaw

Ingredients:
1/4 cabbage minced
1 small carrot minced
1 small cucumber minced
1/2 small red onion minced
1/4 c. tartar sauce (or mayonnaise)

Procedure:
Combine all ingredients in a bowl. Mix until all ingredients are evenly coated with tartar sauce.
